Grocery Bistro Chef Andre Christopher's Blurry Vegetarianism

File under Does This Really Count? Dish reports that André Christopher, chef at the newly opened Grocery Bistro, is a vegetarian. So how does he do the whole cooking thing with the meat on his menu? “I taste stuff, obviously, but I just take it out of my mouth. My palate knows. For taste you just need your tongue and your brain.”

  • I applaud this chef for his vegetarianism. I myself am not one, but I understand his words and where he is coming from. I think this is very noble and refreshing of him! Bravo

  • Veeery different than wine. I've been a pescatarian for 12 years, and just touching raw mammalian flesh skeezes me out. Putting in my actual mouth would make me heave. Which has happened by accident.

  • This would be the food equivalent of the swirling and spitting of wine? Spitting or "taking" out meat protein and sauce just paints a different picture.

  • If meat is murder, isn't this the culinary equivalent of luring hookers into your van, chaining them in your basement while you prance around in a jockstrap to In-A-Gadda-Da-Vida, and then letting them go?
