Go Fish With Sky Full of Bacon

Something is fishy about the most recent Sky Full of Bacon, in which culinary documenatian Mike Gebert looks into perhaps the least-understood protein on our plates: seafood. Gebert hops around Chicago-area fish hotspots in search of the perfect intesection of sustainability and deliciousness, seafood distributor Supreme Lobster, to sustainable seafood retailer Cleanfish, to the good folks at the Shedd Aquarium. Our favorite part comes early, when Supreme Lobster’s Carl Galvan talks about manning his popular Twitter feed, and reveals how it doubles as a chef’s sourcing tool: “[Lockwood chef] Phillip Foss is a classic one for that. If he sees me post something he’ll Twitter me — direct message me on twitter, and say ‘I want one of those, pack it up.’”
