Paul Kahan is a master of many things, and in a short video just posted online, he shares his way of making tacos al pastor: "The secret is just developing layers of flavor," says Kahan, sitting in front of a Kung Fu poster in what appears to be a northwest side taco stand. "That comes through the proper treatment of chiles, annato seed, things like that. I think acidity is important, probably from orange. But all the recipes are secret, so I can't tell you how that's going to play."
