We hear word that Chef de Cuisine at the Untitled Paul Kahan Taco Project (which looks like it’ll be inspired by the L.A. taco scene) will be Justin Large. Large is the Avec sous chef who designed the bar menu at the Violet Hour, and whose head cheese whole-grain mustard ravioli en brodo was Reader critic Mike Sula’s favorite course during last year’s Whole Hog Project dinner.
