Spiaggia, chef Tony Mantunano’s temple to high-end Italian authenticity, catapulted to global fame during the 2008 election when it became known as Barack and Michelle Obama's favorite restaurant. But as Spiaggia's star rose, its kitchen was in upheaval: chef di cucina Missy Robbins left Chicago last September for a new gig running the show at New York’s A Voce . Chef Sarah Grueneberg took over and — as she nears her one-year anniversary at Spiaggia's helm — took us on a tour.
