Tony Mantuano’s Art Institute jewelbox Terzo Piano is only open for dinner one night a week, and he’s determined to make it a doozy. Thursday evening diners can now turn to a prix fixe (’scuse us, presso fisso) selection of three courses that read like a veritable who’s-who of the farmer’s markets: McWethy, Nichols, Nettesheim, and plenty of others. Of course it’s all done from Mantuano’s signature hyper-flavorful Italian-inflected angle — think mozzarella ravioletto with tomato, fava beans, and spring garlic; or poached Yukon River salmon with fennel puree and cauliflower almond salad.
