The friendly whole-animal locavores at Mado have received their first piece of hate mail! Owner Rob Levitt gets called a “murderous motherfucker” in the anonymous missive, which is scrawled on the very page of this month’s Bon Appetit that names Mado one of the best new restaurants in America, with the passage about the restaurant’s biweekly receipt of a 180-pound Slagel Farms pig highlighted in yellow. “We are very proud of the fact that we buy and use the whole animal, not as a novelty, but as a business model,” defends Levitt on the restaurant’s blog. “This is the way it should be.” [MadoBlog via Chicagoist]
