Paul Kahan's Place On The Momofuku Wall Of Chefs To Watch Out For

The above wall covered in pictures of big-deal food guys is located at New York's Momofuku Ssam Bar, one of David Chang's three New York restaurants. The photo comes courtesy of New York blog Opinionated About Dining, who says that when he asked Chang about the wall, the chef explained that “Since we don’t take reservations, when we know a chef is coming to town we put his photo on the wall so the staff can recognize him." We're particularly jazzed by that guy up in the top right — if you can't make out the fuzzy writing it reads: "Paul Kahan. Chicago. Chef of Blackbird/Avec. Be on the lookout. Alert a manager if you see him." [OAD]

  • Paul is truly one of the great chefs out there. A real intuitive talent for flavor combinations and cooking. Too bad he'll have to sit on a lame stool if he goes to Momofuku Ssam bar. I like that Sam Sifton's photo is up there too. Evidently Chang is nervous that Sifton will come in and take away one of the stars that the New York times gave him.
