Michael Nagrant throws down the barbecue gauntlet with his declaration on Serious Eats that Chicago barbecue is better than Memphis’s, whose dry-rubbed ribs he found underwhelming on a recent trip. In fact, he goes even further, hypothesizing that “Chicago has the best retail barbecue food scene in America right now.” He’s quick to note that he doesn’t think Memphis ‘cue (or, presumably, the barbecue of any other region) is bad — just that what we can get at the likes of Smoque (best brisket outside of Texas), Honey 1 (killer hot links), and — most of all — Uncle John’s (the whole darn package) kicks the pants off of Tennessee. Someone’s looking to start a war.
