The love for Evanston’s Edzo’s Burger Shop seems to be unending — it’s been called the closest thing to In-n-Out Burger in town, among other accolades. All the credit is due to owner Eddie Lakin, a former fine-dining chef at Nacional 27 and TRU who committed himself to the pursuit of the ideal burger-and-fries meal. Sky Full of Bacon (in collaboration with the Reader) went into the kitchen to find out the secrets to Lakin’s success: fresh-ground beef, avoiding fries that are too perfect, and caring a whole lot.
