Eat Presidential with C-House’s State Dinner Recreation

Fresh from their D.C. trip assisting Marcus Samuelsson in his oversight of the Obama administration’s first State Dinner, C-House executive chef Nicole Pederson and pastry chef Toni Roberts will be recreating the menu tomorrow night. The four-course, Indian-influenced meal was originally made using arugula and herbs from the White House garden — which, alas, won’t be in use for the Chicago edition. But even without Michelle’s green thumb, we anticipate good things. In case you’ve forgotten the menu, a refresher:

1st Course

Potato and Eggplant Salad with arugula, onion seed vinaigrette

2008 Modus Operandi, Sauvignon Blanc, Napa Valley California

2nd Course
Red Lentil Soup with apples, fresh cheese
2006 Brooks Winery, “Ara”, Willamette Valley Oregon

Entrée
Green Curry Prawns with caramelized salsify, smoked collard greens and coconut aged basmati
2007 Beckmen Vineyards, Grenache, Santa Ynez California

Dessert
Pumpkin Pie Tart & Pear Tarte Tatin
NV Thibaut-Janisson, Brut

The December 9 dinner costs $54 (or $74 with wine pairings), and reservations are recommended: call (312) 523-0923. On the offchance you’re out of town, the menu is also being recreated at Samuelsson’s New York restaurant, Riingo
