Gilt Set to Open February 16

We just got the scoop that Gilt, the tavern-ish spot being opened in the former Aigre Doux space, has set a firm opening date of February 16 — just in time to avoid the whole Valentine’s Day whoopdedo. Chef Brendan Sodikoff plans for the low-key restaurant to be a departure from his relatively stuffy resume (French Laundry, Per Se, Alain Ducasse, the Paris Ritz), decking the room out with salvaged furniture and working closely with local farmers like Spence and Gunthorp. And they’re hoping the River North address will translate to a late-night crowd: dinner will run daily until 2 a.m.
