If there has been one positive development to come from the insane number of taco joints that have opened up recently, it's that at least the new openings have to try to find a way to get noticed. Occasionally you'll get antics like Taco Fuego's monster burrito, but hopefully more people will follow the lead of Bucktown's Taqueria Ojo de Agua, which just opened this weekend in the space formally held by Think Cafe. Its menu may have the usual assortment of tortas, tacos, burritos, and quesadillas, but thankfully all the tortillas happen to be made by hand. That's a good development.
