It’s only been a few days since Aaron Deal was replaced at the Custom House by Perry Hendrix, but it looks like that transition won’t happen seamlessly. Time Out Chicago reports that chef Eric Aubriot will come in during the interim and completely remake the menu. As The Stew notes, Aubriot is a veteran of the scene having worked at his self-titled restaurant Aubriot in Lincoln Park and Tournesol in Lincoln Square, both of which are now closed. He also had some impressive stints in France. Hendrix is supposed to start full time around Labor Day. [TOC]
