We’ve made a few jokes about the sheer number of barbecue restaurants that have opened up this summer, but while Maude’s Liquor Bar claims to be going for “French barbecue,” it’ll look a little different than the rest. First off, it’ll be owned by Gilt Bar’s Brendan Sodikoff. Talking to Chicago Magazine, he claims that the restaurant will be “like a dive bar in Paris,” and will feature freshly made sausage, a raw bar, and cocktails.
