Aviary’s Old Fashioned in Frozen Egg Form

While we continue the Chicago Gourmet countdown, we thought we’d take a little break and catch up with one of the major chefs that did not attend the event. Grant Achatz wasn’t spending any of his time waiting in those lines. In fact, he just released a new video of yet another cocktail from the upcoming Aviary. The Old Fashioned is often mentioned as the oldest cocktail, but we doubt it’s ever been stirred up, injected with a syringe into a hollow ice cube, and then cracked open like an egg into a glass. As always, Craig Schoettler is there to describe it best: “The possibilities of what we can do with this…it’s endless.” Check out the full video after the break.
