The Classic bánh mi from the Saigon Sisters
Saigon Sisters has been a staple of the Chicago French Market for a while now, serving up bánh mis and big bowls of phở. But it looks like the shop is finally going to get its own location, even if it is all of a half block away. The space will allow them to expand the menu and keep later hours. Owners Mary Nguyen Aregoni and Theresa Nguyen are also promising a more inventive menu from Executive Chef Matt Eversman, who has worked at both Charlie Trotter’s and May Street Market. The new River West shop plans to open later this fall.
