Seen above, the state of Grant Achatz’s Next restaurant (it’s the one on the left; Aviary is on the right) last September, which, if our estimates are correct, was right around the time that Bon Appétit’s editors would have been closing their December issue. Interesting, then, that Andrew Knowlton picked Next as one of the country’s “Top 10 Best Celebration Restaurants” in said issue. Maybe Mr. Knowlton likes to celebrate by laying a little drywall? Or maybe the knack for preemptively putting Next on best-of lists is just catching on over at Condé. Either way, the latest is that Next will actually open in February. [BA]
