Used to be that there was just Pequod’s out on Clybourn Ave. if you wanted pizza. But now with Sono Wood Fired and newcomer redFlame, which plans to open in December, Clybourn is turning into something of a pizza corridor. redFlame will offer 15 different varieties of 14-inch pizzas, and according to Time Out, each will be cooked in a unique “two-flame” process. The crust will be grilled first, and then “flamed to heat the toppings.” If we are to believe its website, this method honestly “creates the perfect pizza.” Hmm… Has anyone heard of this before? Hey, at least it isn’t advertising its brick oven from Naples. [TOC]
