This is a busy week for most restaurants, as the steady holiday traffic should generate some good sales. But come January a few restaurants will be taking some much needed time off. The folks at Ria will actually be taking most of January (the 1st through the 25th), so that the kitchen staff can travel to New York for research. Rick Bayless’s restaurant empire (Frontera Grill, Topolobampo, and XOCO) will be closed from January 1st to January 10th. And, of course, Hot Doug’s can’t even wait until the new year. The city’s most prestigious hot dog stand will be off from December 24 through January 4. While no research trips are planned, Doug Sohn mentioned on the website that Scotch will be had.
