RedFlame just opened last night on Clybourn Ave. Though it's one many pizza openings this year, it is different than most, as it uses a unique two step process to cook the pizza. First the dough is grilled, and then it broiled to help cook the toppings. Now, we’re not exactly sure whether the technique will improve the pizza, but we’re open to try anything that will give us better pizza. What we do have is a look at the full menu. To be sure, this isn’t a strict Neapolitan pizzeria. Sure, you can get a margherita with fresh basil, but most of the 14-inch offerings are far more playful. That means you can score a “Southside,” which is topped with Italian beef and giardineria, or a “Philly” with sliced roast beef, mushrooms and caramelized onion. It’s a pretty massive menu, and you can take a look at the whole thing below.
