First Look Inside Hoyt’s Chicago

Hotel 71 is the midst of a massive renovation project, which includes a new lobby, and, as we mentioned last week, a brand new restaurant. Hoyt’s Chicago will be located on the ground floor of the well situated hotel, and it plans to open up around St. Patrick’s Day. That makes sense considering it has a prime view of the soon-to-be green Chicago River. Of course, we are most interested in what the food is going to be like. While the full menu has not yet been released, we were lucky enough to stop by for a preview event last week, and came away with a slideshow of some of the items that will be featured.

Chef Gabriel Kolofon just came from restaurant in Colorado, but he’s originally from Argentina. So it’s no big surprise that he can cook a steak, and that it also comes with a salsa verde on top. The rest of the items we sampled were more traditional. That includes mussels and fries, a collection of sliders, and a caprese salad. The inside of the restaurant is still being constructed, but check out the slideshow of the food from the preview event.
