When Matthias Merges left Charlie Trotter’s after 14 years, he seemed to have a pretty good idea about what he wanted to do next. According to immediate reports, it was going to be a “humble restaurant,” which would celebrate “craft in America.” So you can imagine our astonishment when Penny Pollack from Chicago Magazine tweeted that Merges was actually going to open a yakitori inspired joint in Logan Square. Yakitori refers to a Japanese style of grilled chicken on skewers, which sounds awesome. Still, that’s not at all what we expected. Pollack explains that it will still be “small & friendly,” though.
