It’s no great secret, but it still hurts to admit that Chicago has a pretty weak doughnut scene, especially compared to places like Los Angeles. Sure, we have the fantastic Old-Fashioned Donuts, but it is located on the far South Side, meaning we only get to indulge occasionally. But that’s apparently all going to change, as Time Out broke the news about The Doughnut Vault, a new project from Gilt Bar owner, Brendan Sodikoff. It’ll be located in the same building as Gilt Bar, but don’t expect any normal hours. Sodikoff claims that the shop will send out 20 minute warnings to customers, letting them know when a batch is about ready. If the doughnuts end up being as good as they look, we can imagine dashing to The Doughnut Vault to become some new kind of game. Look for it to open in a few weeks. [TOC]
