Hoyt’s Trio Sliders (Turkey, Chicago BBQ Pork, and Short Ribs)
After a massive renovation, Hotel 71’s brand new restaurant, Hoyt’s Chicago, is set to open Thursday in the Loop. The name for the restaurant comes from one William M. Hoyt, who was apparently a 19th century food distributor in the same area as where the hotel is currently located. It’s a good story, and the owners seem to be taking it seriously, as and everything from the menu to the logo, seems to echo old school Chicago. Of course, as we noticed when we sampled a few of the items last week, there are also some interesting twists thanks to Executive Chef Gabriel Kolofon, who was born in Argentina.
