Bon Appétit Selects Ruxbin as Fifth Best New Restaurant in the Country

If you were to guess which Chicago restaurant made Bon Appétit’s recently released list of “Best New Restaurants in America in 2011,” what place would you go with? Next, Perennial Virant, or GT Fish & Oyster? Nope, nope, and nope. The magazine actually went with Ruxbin, the little BYOB hit on Ashland Ave., naming it the fifth best new restaurant in the country. Andrew Knowlton explains: “Skipping the kimchi taco route that’s so popular elsewhere, [chef] Kim takes a chance (and succeeds) with dishes like a clever spin on the clambake and calamari stuffed with chicken and pork forcemeat and Korean chili.” Congrats to Edward Kim and the whole crew.
