It’s hard to believe that Saigon Sisters’ second location is still less than a year old. The first location was simply a very good banh mi stand in the Chicago French Market, but the second location somehow transformed into one of the biggest dining surprises of 2010. Run by Theresa Nguyen and Mary Nguyen Aregoni, the restaurant found a surprisingly capable executive chef in newcomer Matt Eversman. But after only seven months, he left for a project of his own. Aregoni immediately stepped in as the interim executive chef, but this morning the restaurant announced that Matt Riordan would officially take over.

Most recently, he was the executive chef at Pops for Champagne. No immediate details have been released about a menu change, but he does plan to continue the restaurant’s focus on balancing the “unique Vietnamese flavors with a decidedly Chicago and Midwestern focus.”
