Video: How Tonight’s Smoque-Cemitas Puebla Collaboration Came To Be

It’s a match made in Guy Fieri’s cholesterol-filled heart: two of the great joints of the Chicago food scene (and we use joint as a term of utmost respect) coming together for one night to make a sandwich whose genius will live in legend. The two are Smoque BBQ, Old Irving Park’s beloved and insanely popular Texas-style barbecue joint, renowned for its brisket, and Cemitas Puebla, the authentic Mexican Pueblan sandwich shop. (And we’re not kidding about Fieri, they’ve both been on his show, not to mention, closer to home, both being LTHForum Great Neighborhood Restaurants.) The sandwich that will live in legend is… a Smoque brisket cemita, putting Smoque’s brisket on Cemitas Puebla’s crusty bread with imported Pueblan cheese, chipotle pepper sauce and Smoque barbecue sauce. Tonight only at Smoque, the Anteliz family of Cemitas Puebla will be dishing them up side by side with Barry Sorkin and crew from 5:00 p.m. to 9:00 p.m. (or until they run out, which we consider highly likely). We spoke with Tony Anteliz yesterday to find out how he got to know the Smoque guys, and where the inspiration for the sandwich came from. (Twitter is involved.) Watch our 3-1/2 minute video below.
