Sable Mixologist Joins Paul McGee For Tiki Project

It’s like intergalactic beings from a tiki planet are sucking up all our mixologists! (Excuse us for a moment, we just had an idea for an indie film in 1983.) Sterling Field, the much-admired bartender at Sable Kitchen & Bar in the Kimpton Hotel Palomar Chicago, is leaving to join Paul McGee to work on his various Lettuce Entertain You/Melman Bros. projects, including the un-named tiki project beneath Bub City, and also something to do with something at RPM Italian, the Rancics-Doug Psaltis-Melmans Italian spot at 52 W. Illinois that had a debut party Saturday night and will officially open sometime this week. Field’s last night is Saturday; then it’s into the depths of the mothership to work on recipes before the River North tiki place opens in the summer.
