Top Chef Fan Fave Fabio Viviani To Open Restaurant in Chicago

“We could serve monkey ass in empty clam shells and still win,” Fabio Viviani said during his season of Top Chef’s Restaurant Wars episode. We are hoping that’s not the thought in the back of his head as he contemplates opening a restaurant in Chicago. He says it’s because “I’ve been a fan of Chicago before I was involved with any business…. it’s a great destination for fantastic food and food personalities.” Eater reports that he’s teaming with the owners of Public House and Bull & Bear, it will be at least “fairly Italian,” and a location has been picked but both it and other pertinent details (name, opening date, etc.) will be announced later.
