And Speaking of Chicken, Here’s Stephanie Izard

While we were talking to Jared Van Camp and Chris Dexter about their new chicken place, Stephanie Izard was talking to the Tribune’s Phil Vettel— and saying almost exactly the same things (not a huge surprise that chefs are into the same concerns). She too was eating at a chicken place, in the North Bridge mall on Michigan Avenue, wishing she could know where the chicken she was eating came from. (Ironically, she could have answered that question, it appears, by simply going to the mall’s website.) That led her to the thought of a chicken place built on chicken from local farms (just like Van Camp & co.)— which in turn led to a concern, as it did for Van Camp & co., about making sure she could get good chickens from good farmers in the right quantity. So what’s the difference? Well, it’s unclear from the article whether it’s going to be fried, grilled or what kind of chicken, and we’re assuming it’s whole pieces just because it never says anything else— like sandwiches. Anyway, she hopes to open in River North next spring, though it will have to come after her next opening, The Little Goat, which is set to open on Randolph Street in the fall. [Tribune]
