Charlie Trotter's final event will be Friday night, but the big sendoff for his legendary Chicago restaurant was August 19's 25th anniversary dinner, with guest chefs including Nathan Myhrvold (Modernist Cuisine) and Sean Brock (Husk and McCrady's in Charleston). And if you didn't have the $2500 per plate to attend, we're about to get you in backstage. In this exclusive video, "Last Night at Charlie's," we take you behind the scenes to show you what goes into a night of service beyond any other at Charlie Trotter's. And we talk with Myhrvold and Brock about Trotter's influence on their cooking and how he transformed our dining scene today. As Brock puts it, thanks to the Internet, "these days it's quite easy to be inspired by the food that's going on in Spain or Copenhagen or Paris ... he was doing it before it was easy." Watch the nine-minute video below, and then check out our slideshow after the event showing more of the dishes.
