Last week we told you that RM Champagne Salon, the year’s most highly anticipated spot, finally opened its doors. We’ve been waiting with bated breath since the Champagne lounge-cum-secret hideout, occupying the alcove behind Nellcote, announced its imminent arrival. An intimate French-infused place all about the bubbly — what?! There was nothing we could do to contain our excitement. So we were wondering…since we’ve been waiting such a long time for this place, does it live up to the hype? Has it been inundated with foot traffic? We sat down with Jason Wagner, RM’s somm, to discuss. Below, RM by the numbers…

1500: the number of RM’s square feet, and number of people through the door thus far
445: the number of mignardise (desserts) sold
407: total number of bottles sold
84: number of seats in the outdoor patio
82: number of actual champagnes by the bottle
80: percentage of clientele that identifies as female, and number of still wines offered
76: number of large format bottles opened (magnums, jeroboams)
55: number of seats indoors
37: number of bottles sabered (Napoleon-style!)
25: number of villages represented from the four major regions of Champagne
22: number of sparkling wines on the list that are not champagne (cava, prosecco)
20: number of dessert wines offered
14: number of BTG pours
4: number of couples caught making out in the alley
