Finding Grace: Factoring Service Flow (and 'Tron') Into a Restaurant’s Design

In the fourth installment of our exclusive web series Finding Grace: The Making of a Restaurant, chef Curtis Duffy and general manager Michael Muser walk us through the partly built-out Grace space to show us how they've designed the restaurant for optimum flow from kitchen to dining room and back to create their idea of perfect service. It's invisible to the diner, utterly efficient, and above all gracious. For Duffy, it reminds him of Alinea whose kitchen he also helped design.
