RIA was gone, Danny Grant was gone, but Balsan remained what it was, a chic space with contemporary American cuisine. Well, now that seems likely to change too as the Waldorf-Astoria announces its new executive chef. He’s Herve Cuyeu and he’s a French native, whose previous stint was, not surprisingly, at another Waldorf-Astoria property, in Naples (Florida, not Italy). Before that he spent eight years at the Loews Portofino, which is in Orlando, and he got his training in various places in France including La Bastide Gasconne, a Michelin two-star and Relais & Chateaux in the southwest of France.
