Allium Brews Another Beer, With Begyle Brewing; Check It Out Next Tuesday

Last winter we chronicled Allium chef Kevin Hickey’s beer-brewing exploits with Jared Rouben of Goose Island, the result being the limited edition Allium Roses, which was on tap around the time of Allium’s opening. Well, Hickey must have enjoyed the process because he’s done it again, this time with a Chicago startup brewery, Begyle Brewing, located in the Ravenswood Industrial Corridor (you can find their beers at a small but choice selection of pubs in that area). The new brew is called Allium Beta, and it’s a Belgian Ale brewed with sugar beets from Nichols Farm, Saigon cinnamon and Bangladesh bay leaves. Sounds good? Your first chance to try it will be next Tuesday at a debut event at Allium Bar in the Four Seasons, from 5:00 p.m. to 6:30 p.m.; it will be half price at $3 a glass. After that, it will be available exclusively at Allium— for as long as it lasts.
